Sibos 2022, the worldwide financial services event, took place last October in RAI Amsterdam. When it comes to catering, it was very special. Our own Basement Chefs and the organization of Sibos had the common desire to make sustainability and quality possible. Our Food & Beverage team achieved this in many different ways. By making different choices in themes and dishes and with the Plant Based Bar in the Food Hall, 60% of the catering assortment was vegetarian. Even 40% of these was vegan. In four days, more than 6.000 guests have been provided with catering.
Furthermore, agreements were made about the quantity and reduction of food waste. These agreements made it possible that an item was not available anymore. All remaining ingredients were upcycled to the Crew restaurant the same day and were used to make new dishes.
In the Seated restaurant, the focus for 500 guests per day was on the #HartverwarmendAmsterdam project. This gives guests everything the season and our region has to offer with great products. The large and motivated F&B team delivered high quality. The reactions were great, positive and Hartverwarmend.
