RAI Amsterdam hosts exclusive dinner with Bolenius during Metstrade

To celebrate the Boat Builder Awards, our F&B department and the Basement Chefs joined forces with Luc Kusters, the first chef in the Netherlands to earn a Green Michelin Star. On Wednesday evening, November 19, they presented a menu in Harbour 8—the foyer of hall 8 of the RAI—focused on local products, seasonal vegetables, and respect for nature.

Executive Chef Rientz Mulder considered it an honor to collaborate with Kusters. “Restaurant Bolenius in Rembrandtpark is regarded as the Dutch flagship of Dutch Cuisine in fine dining. It places great emphasis on sustainable cooking, which is also a priority for us. Through our Heartwarming Amsterdam concept, we introduce international guests to local initiatives and flavors. Together, we have created a unique menu that not only surprises but also tells a story about sustainability and creativity.”

Luc Kusters added: “I found it a fantastic challenge to scale our kitchen up to 260 covers together with the F&B department and the Basement Chefs. Only through excellent teamwork could we achieve this without compromising our principles. It was a truly special evening.”

The dinner took place during Metstrade, the world’s largest trade show for marine equipment, materials, and systems for the international yacht-building and professional watersports industries. Every November, thousands of industry professionals gather in Amsterdam to network, gain new insights, and share knowledge. (November 18–20, 2025 at RAI Amsterdam)
