Horecava celebrates 70th anniversary with the launch of a trend report
For seventy years, Horecava, RAI Amsterdam’s own trade exhibition, has brought together hospitality entrepreneurs, suppliers and professionals each January to share knowledge, discover new developments and look ahead to the future of the industry.
Published to mark this milestone, the new trend report reflects on seven decades of hospitality and looks ahead to the industry’s future.
Bringing a vision of the future to the plate
To mark the occasion, our own Basement Chef, Rientz Mulder, and his team brought the report’s future vision to life during the press launch with a series of exclusive dishes inspired by the year 2097. The menu featured North Sea tub gurnard with American crayfish, sea spaghetti with banana, and regenerative sauerkraut preserved in a jar.
In this way, the future scenarios outlined in the report were translated into tangible culinary experiences, demonstrating how today’s developments may shape the hospitality industry of tomorrow.
From the restaurant of 2097 to the food chain of tomorrow
The future of food will also take centre stage at FPPxCMS Amsterdam 2026, taking place on 4 and 5 November at RAI Amsterdam. While Horecava looks ahead to tomorrow’s guest experience, researchers, innovators and food producers will focus during this week’s event on the development of novel protein sources and sustainable food production.
Innovations that seem groundbreaking today may, in a few decades’ time, be just as commonplace on menus as the dishes envisioned for 2097.
