Sustainably farmed fish as tuna replacement wins Horecava Innovation Award 2018

Pure Pacific Yellowtail, the sustainably farmed top-quality fish from the Dutch company Kingfish Zeeland, has been announced as overall winner of the Horecava Innovation Award 2018. “Farmed on land without antibiotics or chemicals, this is a flavoursome and sustainable alternative for fish such as bluefin tuna,” noted the jury. “The Pure Pacific Yellowtail is a game-changer in the world of farmed fish.” The 18th edition of the award was presented on Monday 8 January, the first day of the Horecava trade show in RAI Amsterdam.

Healthy guests, a healthy working environment, healthy results and a healthy planet – these are the main motivations behind the winners of this year’s Horecava Innovation Award and Karel de Vos Sustainability Award.

Category winners

  • Pure Pacific Yellowtail from Kingfish Zeeland in Colijnsplaat/Kats also won in the Food & Beverage category. The tasty farmed fish with a frim bite is a responsible alternative to overfished tuna varieties and swordfish. It is sustainably farmed on land with 100% green energy in treated water from the Oosterschelde (which is treated again after use before being returned to its origin).
  • Winner in the Concepts, Interior & Design category is Rebottled Glass by Rebottled from Utrecht: cool retro glasses made from used wine bottles. The concept is based on upcycling rather than recycling, contributing to a better environment. In addition, Rebottled Glass is made by people who had previously found it difficult to find work.
  • In the Digital, Apps & Social Media category, the winner is Formitable from Formitable Amsterdam: easily applicable software that helps reduce the number of no-shows in restaurants by stimulating booking guests to make an advance payment. It also serves as a clever tool for boosting turnover at quieter moments.
  • In the Equipment & Services category, the winner is Ælement Fusion by Salto Systems from Amsterdam: an almost invisibly integrated electronic lock for hotel rooms. Beautifully designed with a subtle ring of light, the lock can be opened by guests using their smartphones. The associated app is fully secure, hospitable and offers opportunities for hotel owners to provide a custom service.

Karel de Vos Sustainability Award
Lotus® PRO cleaning system
by Mother Nature Cleans in Amsterdam won the Karel de Vos Sustainability Award. The smart, openly accessible device can convert tap water on site into stabilised ozone water, which is demonstrably better for cleaning without chemicals. After 24 hours, the ozone water automatically converts back to ordinary water. The device spares the environment large amounts of polluted water, is healthier for employees and cheaper for business owners.

Named after Karel de Vos, the initiator and first jury chairman of the Horecava Innovation award, the Award for the most sustainable business-supporting innovation was presented for the sixth time. All submitted innovations were eligible.

Strong participants
“The number of submissions was similar to previous years,” says Hayk Simons, chair of the 18-member HIA jury. “The level of innovation was surprisingly high, and it was a challenge to select the winners of the various categories. Of course, we would have liked to reward all these brilliant innovations, but even being nominated is quite an honour. The overall winner was a unanimous choice this year and we were all very impressed!”

Innovation & TrendLAB
The 18th edition of the award was open to products introduced to the Dutch food service market after 1 January 2017. The award is aimed to underline the innovative character of the largest food service and hospitality exhibition in the Netherlands, and stimulate producers and suppliers to provide the market with valuable innovations, now and in the future.

All 16 nominated innovations and the winners are on show in the Innovation & TrendLAB (Hall 1) during the four days of the exhibition.
